Moroccan Quinoa Salad

This is one of my more notorious dishes. Some may call me the Queen of Quinoa, but that’s another story.

Servings: 4
Prep time: 10 minutes
Cook time: 35 minuttes

Here’s What You Need:


  • 1/2 c quinoa, rinsed under cold water
  • 1 c vegetable stock
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp nutmeg
  • 1 tsp ground cardamon
  • 2 tbsp dried cherries
  • 2 tbsp almonds, toasted
  • 1 tbsp scallion, thinly sliced


  • Juice from 1/2 lemon
  • 1 tsp lemon zest
  • 1 tsp honey
  • 1 tsp mustard
  • 2 tbsp oil (any kind will work!)

Here’s How You Make It:


  1. In a saucepan bring vegetable stock to a boil
  2. Once stock is boiling, add in quinoa and spices. Stir to combine.
  3. Let quinoa cook for 15 minutes, then add in dried cherries
  4. Continue to cook for 10 minutes, or until quinoa is tender and the adorable curly q is loose
  5. Remove from stove


  1. While quinoa is cooking, combine lemon juice, zest, honey and mustard in a bowl.
  2. Slowly whisk in olive oil until dressing is combined (emulsified)
  3. Salt and pepper to taste

Final Dish

  1. Combine quinoa and dressing, top with toasted almonds and scallions
