Caesar Dressing with Capers

Anchovies are fine, but I’ve always enjoyed the taste of capers more. This dressing is a twist on a classic Caesar dressing. I paired it with lightly grilled romaine lettuce and grill shrimp, then topped with fried capers (did I mention I have a thing for capers?)

Grilled romaine Ceasar with shrimp and fried capers

Yields: 1 cup
Prep time: 10 minutes
Total time: 15 minutes

Ingredients:
  • 1 egg yolk
  • 3 cloves garlic, roughly chopped
  • 2 tsp capers
  • Zest of 1 lemon
  • Juice of 1 lemon (for a more lemon-y dressing, add zest)
  • 1 tbsp asiago or Parmesan cheese
  • 1 tsp soy sauce (or Worcester sauce)
  • 2 tsp Dijon mustard
  • Oil (can be just olive oil or a combo of olive oil and vegetable oil – I like a combo)
Directions:
 
1. In a food processor or blender, combine all ingredients EXCEPT the oil

2. Pulse a couple of times to bring together

3. Turn food processor or blender on high and slowly stream in oil until desired consistency – should take about 1/2 – 3/4 cup of oil

4. Season with pepper (note: do not add ANY salt – the capers and the soy sauce provide all the sodium necessary)
